Healthy No-bake Mini Cheesecakes Recipe

No-bake mini cheesecakes are a simple dinner party dessert. The muffin-pan cheesecakes are nicely portioned!

INGREDIENTS

SERVINGS: 12 CHEESECAKES GRAHAM CRACKER CRUST – ¾ cup crushed graham cracker crumbs about 6 full-sheets (90 grams) – 2 tablespoons granulated sugar (25 grams) – 3 tablespoons unsalted butter melted (45 grams) NO-BAKE CHEESECAKE FILLING – 12 ounces brick-style cream cheese softened (340 grams) – ¾ cup powdered sugar (90 grams) – 1 ½ teaspoons fresh lemon juice – ½ teaspoon pure vanilla extract – 1 cup cold heavy whipping cream (240 ml)

INSTRUCTIONS

Step 1

Lay out 12 cupcake liners in a regular muffin pan to make the graham cracker crust.

Step 2

Stir the graham cracker crumbs and granulated sugar in a medium basin until mixed. Mix in melted butter until all crumbs are saturated.

Step 3

Spread a little over one tablespoon of mixture into each of the 12 cupcake liners. Press the crust into each liner with the bottom of a ¼ cup measuring cup. Set aside while making the filling.

Step 4

To create the filling, beat cream cheese for 1–2 minutes in a stand mixer with the paddle attachment or a large bowl with a handheld mixer until smooth. 

Step 5

Add powdered sugar, lemon juice, and vanilla essence and beat until mixed, scraping bowl sides as needed. Set aside. Mix the heavy whipping cream in a separate bowl. 

Step 6

Mix on low-medium speed for 30 seconds to 1 minute using a handheld mixer or stand mixer with the whisk attachment, then raise speed to medium and mix until stiff peaks form.

Step 7

Gently fold half of the whipped cream into the cream cheese mixture until barely incorporated, then add the rest until entirely blended.

Step 8

Put the filling in a big piping bag and snip the end. Pipe the mixture onto the crust to fill all 12 cupcake liners evenly. Fill each one to the top. 

Step 9

A spoon or cookie scoop can be used to scoop the mixture into each liner, but I like the piping bag!

Step 10

Cover securely and refrigerate for at least 3 hours (or overnight). Remove from pan, top with your favourite toppings, and serve!
