Vanilla Chai Overnight Oats Recipe

A warmly spiced infusion of goodness, Vanilla Chai Muesli is great for the autumn and winter months because it is suitable for the season! 

– 1 ½ cups Gluten-Free Old Fashioned Rolled Oats – 1 (14-ounce) can full-fat coconut milk or non-dairy milk of choice* – 3/4 tsp ground cinnamon – 1/4 tsp ground ginger – 1/8 tsp ground nutmeg – 1 pinch allspice less than 1/8 tsp – 1 pinch ground cardamom less than 1/8 tsp – Pinch sea salt – ½ vanilla bean scraped – 2 to 4 Tbsp pure maple syrup plus more for serving, to taste Optional Additions: – 1 Tbsp chia seeds see note – 2 to 4 Tbsp protein powder of choice

Put all the overnight oats ingredients in a large jar. If you don't have a large jar, prepare the oats in a large dish to make a lot of muesli.

Put the lid back on the jar and give it a good shake until everything is mixed.Put in the fridge overnight (or for at least three hours).

Stir and taste before serving. To improve flavour, add pure maple syrup or cinnamon. Add fresh fruit, nuts, seeds, or anything else you prefer.
