INGREDIENTS
– 1spaghetti squash2-3 pounds, halved lengthwise and seeded– 3tablespoonsextra-virgin olive oil– Coarse salt and freshly ground pepper
INSTRUCTIONS
STEP-1
Start with a 420-degree oven.Thoroughly wash, dry, and slice the squash lengthwise. Scoop seeds.
STEP-2
Put olive oil on each squash half. Apply it to the flesh and outside. One tablespoon olive oil per half.
STEP-3
Season meat with salt and pepper.
Place it cut-side down on a parchment-lined rimmed baking sheet.
STEP-4
Roast squash in the preheated oven for 45–60 minutes, depending on size, until soft when pierced with a knife or fork.
STEP-5
Once done, remove from oven and let cool on baking sheet for 10-15 minutes until handleable.
STEP-6
Cut side up and gently scrape flesh in long strands with a fork. Place "spaghetti" in a bowl, drizzle with the remaining 1 tablespoon of olive oil, and add salt, black pepper, and lemon juice if preferred.
STEP-7
Optional: chopped parsley and pepper flakes for heat.
