Stuffed Grilled Avocados with Shrimp and Mango Salsa Recipe

For a side dish or appetiser that is absolutely mouthwatering, cook some avocados and stuff them with grilled prawns and mango salsa stuffed inside of them.

For the Grilled Shrimp: – 1 pound raw shrimp peeled and deveined – 2 tablespoons avocado oil or olive oil – 1/2 teaspoon garlic powder – 1/2 teaspoon paprika – 1/4 teaspoon sea salt For the Grilled Avocados: – 4 to 6 ripe but firm California Avocados halved, pits removed – avocado oil or olive oil for coating – sea salt Mango Salsa: – 1 cup fresh mango diced – 1 fresno chili seeded and finely chopped – 1 jalapeno seeded and finely chopped – 2 tablespoons red onion finely chopped – 1 tablespoon fresh lime juice – 1 pinch sea salt to taste

Light the coals or start the grill at medium-high. Combine all prawn ingredients in a sealable bag and shake vigorously while the grill heats.

 Apply avocado oil or olive oil on the avocado flesh and sprinkle with sea salt. Grill avocados cut-side down.

Flip and grill 2 more minutes. Reserve cooked avocados on a dish. Grill prawns for 2–3 minutes until grill marks form.

Flip and grill for another minute or two until prawns are done. Place prawns on a plate.

Pour all of the ingredients for the mango salsa into a bowl and mix them together.

Pour mango salsa into avocado halves and add 2–3 cooked prawns. Serve and relish! Extra prawns can be served in a bowl to guests.
