Stuffed Grilled Avocados Recipe

For a crazy tasty side dish or appetiser, cook some avocados and stuff them with grilled prawns and mango salsa.

For the Grilled Shrimp: – 1 pound raw shrimp peeled and deveined – 2 tablespoons avocado oil or olive oil – 1/2 teaspoon garlic powder – 1/2 teaspoon paprika – 1/4 teaspoon sea salt For the Grilled Avocados: – 4 to 6 ripe but firm California Avocados halved, pits removed – avocado oil or olive oil for coating – sea salt Mango Salsa: – 1 cup fresh mango diced – 1 fresno chili seeded and finely chopped – 1 jalapeno seeded and finely chopped – 2 tablespoons red onion finely chopped – 1 tablespoon fresh lime juice – 1 pinch sea salt to taste

Heat grill or coals to medium-high. Stir the prawn ingredients in a sealed bag while the grill heats. Spread avocado or olive oil on avocado flesh and add sea salt.

Grill avocados cut-side down. Flip and grill 2 more minutes. Reserve cooked avocados on a dish.

Grill prawns for 2–3 minutes until grill marks form. Flip and grill for another minute or two until prawns are done. Place prawns on a plate.

In a bowl, combine all of the ingredients for the mango salsa by stirring them together.

Place 2–3 cooked prawns over mango salsa-filled avocado halves. Serve and enjoy! Guests who want more can get leftover prawns in a bowl.
