Strawberry Conversation Heart Cupcakes Recipe

Sweetest Strawberry Conversation Heart Cupcakes. Real strawberry jam, lemon, and vanilla flavour gently sweetened cupcakes. The greatest strawberry cream cheese icing and lemony glaze are on every cupcake. These are easy, tasty, and amusing! You may bake these cupcakes tomorrow, this weekend, or any time of year. 

Ingredient

– 2 cups freeze-dried strawberries – 1/2 cup melted coconut oil – 3/4 cup granulated sugar – 2 teaspoons vanilla extract – 2 large eggs at room temperature – 1/3 cup high quality strawberry jam – 1/2 cup milk – 1 1/2 cups all purpose flour – 1 1/4 teaspoons baking powder – 1/2 teaspoon baking soda – 3/4 teaspoon kosher salt – 4 ounces cream cheese at room temperature – 4 tablespoons salted butter at room temperature – 1 1/2 -2 cups powdered sugar – 1-2 tablespoons cream or milk – 1 cups powdered sugar – 1 tablespoon Meyer (or regular) lemon juice

Use a blender or food processor to pulverise freeze-dried strawberries. You need 1/2–3/4 cup. Set aside.

Preheat oven to 350°F. Foil-line 16 cupcake moulds. Beat coconut oil, sugar, vanilla, eggs, strawberry jam, and milk with a stand mixer or hand mixer until mixed.

Add flour, baking powder, baking soda, salt, and 4 tablespoons powdered strawberry powder (from step 1). Blend until batter is lump-free.

Half-fill cups. Create a heart shape by placing one marble or pretzel rod stick (or marble-sized foil ball) in each muffin cup between liners and muffin pan.

A little piece of foil can be wedged between the pretzel rod and cupcake to make a heart shape. See image above. Bake until tops are barely set, 18-22 minutes. Remove and cool.

In a large bowl, mix cream cheese and butter to make frosting. Using an electric mixer, beat 2 minutes until frothy. Add powdered sugar and 3–4 teaspoons ground strawberry powder (from step 1).

Mix till blended, then add milk. Frost each cupcake. Make glaze. Whisk powdered sugar, lemon juice, and 1 tablespoon water until smooth and drizzling.

Add water 1 tablespoon at a time to thin the glaze. The glaze should drip yet be thick.
