This simple Small Batch Peanut Butter Cookie recipe uses one bowl! It only takes 30 minutes to create 6-7 cookies!
INGREDIENTS
SERVINGS: 7 COOKIES– 3 tablespoons (50 g) creamy peanut butter– 2 tablespoons (30 g) unsalted butter softened– 3 tablespoons (40 g) brown sugar– 1 tablespoon (12 g) granulated sugar– 1 large egg yolk– 1/4 teaspoon vanilla extract– 1/4 cup plus 2 tablespoons (50 g) all-purpose flour (spooned & leveled)– 1/4 teaspoon baking soda– tiny pinch of salt optional
INSTRUCTIONS
Step 1
Warm the oven up to 350°F. Put a silicone baking mat or parchment paper on a big baking sheet and set it aside.
Step 2
Using an electric mixer, mix the peanut butter and butter in a medium-sized bowl until the mixture is smooth.
Step 3
Mix the brown sugar and white sugar in until they are completely mixed in. Mix the egg whites and vanilla in until they are well mixed in.
Step 4
Mix the flour, baking soda, and salt in until they are well mixed in. Place two tablespoon-sized pieces of dough on the baking sheet that has been prepped.
Step 5
I usually get seven cookies this way. For a small criss-cross design, press down on top of each cookie with a fork. For 9 to 10 minutes, bake at 350°F.
Step 6
After taking the cookies out of the oven, leave them on the baking sheet for 10 minutes to cool down. Move to a wire rack to cool completely.
