Sloppy Joe Casserole

Compromise and comfort collide in this Sloppy Joe Casserole. Tender pasta is crafted into a savoury sloppy joe meat sauce, and a layer of melted cheddar cheese tops it off! This casserole is the love child of deliciousness and comfort food! 

– 8 ounces short pasta – 1 tablespoon olive oil – 1 medium onion  – 1 medium bell pepper  – 1 pound ground beef – 15 ounce tomato sauce – ¼ cup ketchup – 1 tablespoon Worcestershire sauce – 1 teaspoon garlic powder – 1 teaspoon chili powder – salt and pepper  – 2 cups cheddar cheese

Turn the oven on to 375°F, or 190°C. Boil your pasta as directed on the package, but cook it just a little bit less than done. After draining, set aside.

Heat the olive oil in a big skillet over medium heat. Add the bell pepper and onion, chopped. Cook them until they begin to get tender.

To the skillet, add the ground beef. Dice it up and cook it until the pink is gone. If necessary, drain any excess fat.

Mix in tomato sauce, ketchup, Worcestershire, garlic, and chilli powder. Let the mixture simmer for 5 minutes to blend flavours.

Stir the cooked pasta into the beef mixture in the skillet. Salt and black pepper to taste.

Place the beef and pasta mixture in a greased 9x13-inch casserole dish. Scatter shredded cheddar cheese on top.

Place the casserole in the preheated oven for 20 minutes to melt and bubble the cheese. Remove from oven and let rest for a few minutes before serving.
