Scrumptious Peach Cobbler With Canned Peaches

– 1 cup all purpose flour – 5 tablespoon white sugar – 1 teaspoon baking powder – ½ teaspoon salt – 5 tablespoon butter cold cube – ⅓ cup heavy cream cold – 6 tablespoon old fashioned rolled oats  – 2 cups canned peache – 1 cup peach juice from canned peache – ¼ cup brown sugar or raw brown sugar – 1 ½ tablespoon cornstarch – 2 teaspoon lemon juice freshly squeezed – 2 tablespoon butter cold or room temp  – 1 teaspoon cinnamon

Make peach filling. Add peaches, peach juice, cinnamon, lemon juice, cornflour, and brown sugar to a skillet over medium-low heat.

Mix thoroughly. Simmer slowly until the mixture thickens and bubbles. Instead of overcooking, make it thick but not too thick. Adjust heat to low if needed.

Place peach filling in baking dish. Dot 2 tablespoons of butter cubes across the peach mixture. Increase cinnamon on peaches if desired.

Construct Cobbler Topping. Blend flour, 5 tablespoons oats, sugar, baking powder, and salt in a large bowl.

Make crumbles by cutting cold butter into flour. Cut with a pastry cutter or by hand. Do this step slowly and thoroughly.

Mix the ingredients by adding cold cream in batches and stirring gently. Be careful not to over-stir or rush. The flour makes the mixture thick and sticky.

Place flour mixture chunks on peach filling, leaving space between them to show peaches.
