Salted Apple Maple Munchkins Recipe

Freshly baked Salted Apple Maple Munchkins. Made from boiled spiced cider, apple butter, maple syrup, and autumn spices. For each doughnut, glaze with salty-sweet maple. Each bite-size apple maple doughnut hole is delicious! Boiling apple cider intensifies taste. Spiced apple butter enhances apple taste! Bake these often this autumn! 

Ingredient

– Salted butter, softened – 1/3 cup cinnamon sugar – 1 1/2 cups apple cider – 1/3 cup whole milk ricotta cheese (optional, see note) – 2 large eggs – 1/3 cup apple butter – 2 tablespoon maple syrup – 2 teaspoons vanilla extract – 2 cups flour or white whole wheat flour – 1 1/2 teaspoons baking powder – 1 teaspoon ground cinnamon – 1/4 teaspoon grated nutmeg – 1/2 teaspoon kosher salt MAPLE GLAZE – 1 cup powdered sugar – 1/4 cup maple syrup – 2-4 tablespoons apple cider – 1 pinch cinnamon – Flaky sea salt

Heat the oven to 350°F. Butter a 24-cup mini muffin or 12-cup standard pan. Sprinkle cinnamon sugar inside each.

Apple cider should boil over high heat. Reduce heat and simmer for 10-15 minutes to reduce cider to 3/4 cup. Get off the heat. Let chill.

Mix boiled cider, ricotta, eggs, apple butter, maple syrup, and vanilla in a bowl. Mix in flour/whole wheat flour, baking powder, cinnamon, nutmeg, and salt. Just blend.

Fill the prepared pan 1/2–2/3 full with batter. Bake small doughnuts 10-12 minutes or regular muffins 18-20 until just set.

Remove from pan after 5 minutes of cooling. Make the glaze. Mix powdered sugar, maple syrup, 2 tablespoons cider, a pinch of cinnamon, and salt.

Thin with cider as necessary. Dip or drizzle doughnuts in glaze. Some of these should be eaten warm!
