Raspberry Shortcake Ricotta Ice Cream Recipe

The rest of the country from the Central time zone celebrates tonight! Ice cream is the ideal way to celebrate summer's first day, everywhere. Nothing says summer like homemade ice cream.

Ingredient

– 16 ounces whole milk ricotta cheese – 3/4 cup honey – 1 teaspoon vanilla extract – 1 teaspoon lemon zest – pinch of flakey sea salt – 1 cup heavy whipping cream – 1 1/2 cups fresh raspberries (or blackberries, blueberries, etc.) – 2 biscuits crumbled, homemade or store-bought

Combine ricotta, honey, vanilla, lemon zest, and salt in a blender or processor. Puree till smooth.

Whisk cream until firm peaks form in a large bowl. Mix whipped cream with ricotta. If using an ice cream maker, follow manufacturer directions.

Unless you have an ice cream maker, skip this step. Mix in berries and biscuit crumbs. Transfer to airtight container. Freeze until stiff, 4+ hours.
