Paleo Apple Pie Bars (Vegan) Recipe

A grain-free, dairy-free paleo vegan apple pie bar recipe with warm spices! Delicious and easier to make than an apple pie!

INGREDIENT

Apple Filling: – 3 ½ cups apples peeled and sliced thinly (2 apples) – 3 Tbsp pure maple syrup – 1/2 cup water – 1 tsp ground cinnamon – Pinch sea salt – 2 tsp tapioca flour Shortbread Crust and Topping: – 2 ½ cups finely ground almond flour* – 6 Tbsp coconut oil melted** – 3 Tbsp pure maple syrup – Pinch sea salt

INSTRUCTIONS

In a small saucepan, mix all ingredients except tapioca flour for the apple filling. 

Step 1

Cook mixture covered over medium-high heat. Stir occasionally and gently boil until apples have leached out liquid. 

Step 2

Add tapioca flour and cook until thick, 15–20 minutes. Refrigerate until use after cooking. While apple filling cooks, prepare other ingredients.

Step 3

Preheat oven to 350°F and line an 8" x 8" cake pan with parchment. Make the crust by mixing all ingredients in a bowl. Mix into a thick, moist, crumbly dough.

Step 4

Put ½ cup of crust mixture in a bowl for topping.  Apply the remaining crust mixture evenly to the parchment-lined cake pan.

Step 5

Several fork pokes ensure even baking. Bake on the centre rack of the preheated oven for 12–16 minutes until the crust is golden-brown and set. Remove the crust from the oven.

Step 6

Spread apple filling evenly over the crust to make bars. Cover the apple layer with reserved topping. 

Step 7

Bake the bars until the crumb topping is golden-brown, 20–25 minutes. Let crumb bars cool for 30 minutes before slicing and serving.
