Italian Roasted Potatoes Recipe

The simple and tasty Italian Roasted Potatoes recipe uses baby potatoes, fresh garlic, and Italian seasoning. You may easily quadruple this recipe.

– 1 ½ pounds baby potatoes, halved – 2 cloves garlic, sliced – 2 tablespoons olive oil – 2 teaspoons Italian seasoning – ½ teaspoon kosher salt – chopped parsley for garnish, optional

Warm the oven up to 425 degrees. In the upper third of the oven, put the baking rack.

Cut the baby potatoes in half and put them in a big bowl. Add the garlic slices, olive oil, Italian seasoning, and kosher salt.

Toss the ingredients together well with a spoon. Place the potatoes on a baking sheet with some room between them.

For 20 to 25 minutes, or until the potatoes are soft enough to pierce with a fork, stirring them once or twice during that time.
