Individual No Bake Cranberry Cheesecake Jars

These No Bake Cranberry Cheesecake Jars have a golden brown cookie crumb crust, easy cranberry jam layer, and creamy vanilla cheesecake, perfect for holidays. The perfect quick treat is made in cups or jars without baking. 

– 1 cup crushed cookie – 3 tablespoon salted butter – 8 ounces cream cheese – ¾ cup Greek yogurt  – ¼ cup confectioners’ sugar – 2 tablespoon orange juice – 1 cups cranberry orange sauce  – 1 teaspoon vanilla extract – ¼ cup water – ½ cups granulated sugar  – ½ cups fresh cranberrie

Mix melted butter and crushed cookies in a food processor or bowl. Prepare 8 mini-jars. Put 2 tablespoons of crushed cookies in each jar and press down.

Prepare the cheesecake filling by mixing cream cheese, Greek yoghurt, orange juice, confectioners' sugar, and vanilla extract in a bowl with a handheld mixer.

Yes, you can mix everything in a stand mixer bowl. Put cream cheese in a piping bag with a spatula.

Split the mixture evenly between the jars, leaving room for cranberry sauce. Layer cranberry sauce over cheesecake in each jar.

Store the jars in the fridge for 24 hours. Refrigerate for an hour before serving if you're short on time.

In a medium saucepan, mix ¼ cup water and sugar. It should boil and simmer for 2 minutes over low heat. Remove it from heat.

Fully coat cranberries in syrup. After 10 minutes, remove them with a slotted spoon.

Dry them for 30 minutes on a parchment-lined baking sheet or metal rack.Roll cranberries in remaining ¼ cup sugar to coat; work in batches.

Add leftover fresh cranberries to another dessert, freeze them, or top overnight oats.

To decorate, add sugar-coated tart cranberries and rosemary stalks before serving.
