Healthy Morning Glory Quick Bread Recipe

My ideal morning starts with this sweet, healthy Morning Glory Bread. Serve it with coffee or tea for an afternoon snack or healthier dessert.

INGREDIENT

– 2 cups rolled oats* – 2 ripe bananas 1 cup mashed** – 2 large egg – 3 Tbsp avocado oil – 3 Tbsp pure maple syrup – 2 tsp pure vanilla extract – 1 tsp apple cider vinegar – 2 tsp baking powder – 1/2 tsp sea salt – 1 1/2 tsp ground cinnamon – 1 cup grated carrots about 1 large carrot – 1 cup grated apple about 1 large apple – 1/2 cup unsweetened shredded coconut optional – ½ cup raw pecans or walnuts chopped – 2/3 cup raisin

INSTRUCTIONS

Pre-heat the oven to 350°F and line a 9" x 5" loaf pan with parchment. If parchment paper is unavailable, spray the bread pan with cooking spray.

Step 1

Blend oats in a high-speed blender for 30 seconds to make flour. Mash bananas in a large bowl until creamy.

Step 2

Whisk eggs, avocado oil, pure maple syrup, vanilla extract, and cider vinegar until combined.

Step 3

Mix oat flour, baking powder, sea salt, and ground cinnamon in a separate bowl. Mix the flour mixture with the wet ingredients until a thick muffin batter forms.

Step 4

After grating the carrots and apple, add the shredded coconut, raisins, and pecans. Mix everything so the goodies are evenly distributed in the muffin batter.

Step 5

Fill the loaf pan with batter and spread evenly. Top the batter with chopped pecans if desired.

Step 6

Cover the loaf pan with foil and bake 40 minutes. Bake the bread for 20–35 minutes without the foil until it tests clean and is golden brown.

Step 7

Baked goods are done at 190–200°F. Insert a digital thermometer into the bread's centre and wait until the numbers stop moving for an accurate reading. If temperature requires, bake longer.
