Healthy Butterscotch Magic Cake Recipe

Butterscotch Magic Cake: As it bakes, a single, thin, basic batter somehow becomes three layers. It is enchanted!

– ½ cup butter  – 4 eggs  – 1 cup brown sugar – 1 teaspoon vanilla extract – ¾ cup all-purpose flour – 2 cups milk  – ¼ teaspoon salt – powdered sugar



Grease an 8x8 baking dish. Melt butter in a small pot over medium heat. Whisk until it turns golden brown and dark brown specks form in the pan.  


Remove from heat, whisk for 30 seconds, then pour into a basin through a fine strainer. Cool to room temperature.   


Separate eggs and combine egg whites in a mixer until stiff. Reserve egg whites in a dish. Beat egg yolks and brown sugar till light golden.  


Beat butter and vanilla extract for another minute or two, then add flour and blend until well integrated.  


Slowly add milk and beat until fully combined. The mixture will be watery. Add a third of the egg whites and gently fold them in with a spatula.  


Add a third of the egg whites and gently whisk them into the cake batter, then reverse the procedure and add a portion of the cake mixture, repeating until all cake batter is stirred in.  


Fill baking dish with batter and bake for 40–70 minutes until lightly brown.   


Check at 40 minutes to check how it looks and remember that ovens differ. Add powdered sugar when cake cools.
