Healthier Banoffee Pie Recipe

This healthy Banoffee Pie is easy, tasty, and attractive. Filling is bananas, vanilla whipped cream, and caramel. Butter, maple, and graham crackers make the crust. The crust and banana caramel filling produce a salty-sweet pie. Add lots of chocolate shavings for richness! Plus, this pie is gluten-free and vegan!

Ingredient

– 1 1/2 cups graham cracker crumbs (about 10 full-size graham cracker sheets) – 6 tablespoons salted butter or coconut oil, melted – 4 tablespoons maple syrup – 2 cups date caramel (below) or store-bought dulce de leche – 3-4 ripe but firm bananas, sliced – 1 1/2 cups heavy cream (see coconut cream variation in notes) – 2 teaspoons pure vanilla extract – 2 tablespoons maple syrup – chocolate shavings, for topping

Heat the oven to 350°F. Add graham crackers, butter (or coconut oil), and 2 tablespoons maple syrup to a medium bowl. Stir well.

The dough should fit in an 8 x 8 Pyrex Deep baking dish. Place in oven for 8–10 minutes to toast. Calm down.

Spread dulce de leche or caramel evenly in the crust bottom. Overlay bananas with caramel. Creating cream. Use an electric mixer to whip cream and vanilla in a large bowl on medium-high speed for 2–3 minutes until soft peaks form.

Add 2 tablespoons maple syrup and beat 30 seconds. Apply cream to bananas.

Refrigerate 1-2 hours or overnight. Top with chocolate shavings before serving. Cutting the first slice will be messy, so start small.
