– 1 pound fresh green beans – ½ cup almond– 3 tablespoons unsalted butter– 2 cloves garlic – zest of 1 lemon– salt and pepper – 1 tablespoon lemon juice – fresh parsley

Bring a large pot of salted water to boil. Add the green beans and cook for 3-5 minutes until tender but crisp.

Drain and immediately immerse in ice water to stop cooking. Blanching makes green beans look like emeralds!

Toast the almonds in a large skillet over medium heat, stirring often, until golden brown.

This should take 3-5 minutes. Remove and reserve almonds. Melt butter in same skillet over medium heat.

Add minced garlic and lemon zest and cook until fragrant. Toss blanched green beans in garlic-lemon butter in the skillet.

Cook until heated, 2-3 minutes. Sprinkle salt and pepper. Pour lemon juice over green beans and toss again.
