Green Bean Almondine

Elegant and simple, Green Bean Almondine is a quick and easy classic! It has tender green beans in a buttery, garlicky sauce with slivered almonds for crunch!  

– 1 pound fresh green beans  – ½ cup almond – 3 tablespoons unsalted butter – 2 cloves garlic  – zest of 1 lemon – salt and pepper  – 1 tablespoon lemon juice  – fresh parsley

Bring a large pot of salted water to boil. Add the green beans and cook for 3-5 minutes until tender but crisp.

Drain and immediately immerse in ice water to stop cooking. Blanching makes green beans look like emeralds!

Toast the almonds in a large skillet over medium heat, stirring often, until golden brown.

This should take 3-5 minutes. Remove and reserve almonds. Melt butter in same skillet over medium heat.

Add minced garlic and lemon zest and cook until fragrant. Toss blanched green beans in garlic-lemon butter in the skillet.

Cook until heated, 2-3 minutes. Sprinkle salt and pepper. Pour lemon juice over green beans and toss again.

Taste and season as needed. Return the toasted almonds to the skillet and mix well.

Add some fresh parsley as a garnish if you're feeling particularly fancy. It is best to serve this dish right away.
