Easy Slow Cooker Pork Roast Recipe

This easy one-pot pork roast recipe with fresh veggies and thick broth is a warming supper.

– 1 (2.5 to 3- pound) boneless pork butt roast – Sea salt and pepper – 2 Tbsp avocado oil – 1 large yellow onion sliced – 1.5 lbs potatoes I use baby gold potatoe – 3 large carrots chopped into large chunk – 8 ounces mushrooms chopped, optional – 5 cloves garlic minced – 3 sprigs fresh thyme – 3 cups beef broth – 1 cup red wine optional

Unpack the pork roast and place it on a chopping board or large plate. If the roast has netting, remove and discard. Press paper towels on the roast to remove excess liquid.

Season the roast with sea salt and pepper. Heat avocado oil in a large cast iron skillet over medium-high heat.

After the oil sizzles for a few minutes, carefully set the seasoned pork roast on it.

Sear for 6 minutes, flip, and sear for 3–6 more minutes until golden brown.Stir all ingredients into the crock pot bottom while the meat browns in the skillet.

Move vegetables to make place for browned meat in crock pot.Cover and cook the pork roast on high for 5–6 hours or low for 8–10 hours in the slow cooker until fork tender.

Move the slow-cooker roast to a chopping board. Shred the roast into shredded pork with two forks or cut it into bits for serving with a sharp knife.
