Cover a large baking sheet with parchment. Set aside. Mix peanut butter and butter with a handheld mixer in a large bowl.

Add powdered sugar, vanilla extract, and salt and beat until mixed, scraping basin sides as needed.

Spoon peanut butter mixture into balls and set on baking sheet using a one-tonner measuring spoon or cookie scoop. Place the peanut butter ball baking sheet in the freezer for 20 minutes.

Put chopped chocolate in a medium microwave-safe bowl. Stir well after each 20-30 second microwave increment until thoroughly melted and smooth.
Step 5
Take the peanut butter ball baking sheet out of the freezer. Return each peanut butter ball to the baking sheet after dipping in melted chocolate.
Step 6
After coating all the peanut butter balls in chocolate, refrigerate the baking sheet for 45–60 minutes to solidify the chocolate.
