Crock Pot Chile Colorado Recipe

This restaurant-quality Chile Colorado recipe is simple to make and yields tender beef in a rich, mild red chile sauce. For an alien dinner, serve it with rice, beans, and tortillas! 

INGREDIENT

Chile Colorado Sauce: – 6 dried guajillo chiles – 2 dried ancho chiles – 2 dried arbol chiles* – 1 small yellow onion diced – 4 cups beef broth or chicken broth – 2 tsp dried oregano – 1 tsp ground cumin – 2 tsp garlic powder – 1 tsp sea salt to taste For the Beef: – 2 Tbsp avocado oil – 3 lbs beef stew meat – ¼ cup gluten-free all-purpose flour** – 1 tsp sea salt – ½ tsp black pepper – 2 bay leave

INSTRUCTIONS

Get a big cast iron skillet hot over medium-high heat. Add two to three tablespoons of cooking oil, like olive oil or avocado oil.  

Step 1

Spread the meat out in a single layer on the hot pan. Depending on the size of your pan, this may need to be done in two batches.  

Step 2

Let one side of the meat brown for two to three minutes, then flip it over and let it brown for one more minute or two, or until both sides have a nice golden brown crust. 

Step 3

Move the meat to a plate, and do this again with the rest of the beef. Move the meat to the crock pot after it has browned.
