Creamy Italian Sausage Soup Tuscany Style

Italian sausage, cream, healthy kale, potatoes, bacon and pungent aromatics make this Creamy Italian Sausage Soup delicious.  

– 1 pound spicy Italian ground sausage – 4 tablespoons unsalted or salted butter – ½ white onion  – 1 tablespoon minced garlic – 5 cups chicken/meat or vegetable broth – 3 cups water – 4-5 potatoes cut into ½-inch piece – 2 teaspoons salt or to taste – 1 teaspoon black pepper – 2 cups heavy cream – 1 handful of cooked crispy Bacon  – 4 cups chopped kale – Olive oil for cooking



Cook chopped bacon in a dutch oven or large pot over medium-high heat until crisp. Transfer to a plate and spoon off fat.

Leave a few tablespoons in the pot and brown sausage/ground meat by breaking it apart. Set aside. Add olive oil if needed. Set aside.

Butter and onions over medium heat in the same pot until softened and golden. Add minced or pressed garlic and sauté 30 seconds until fragrant.

Add water, chicken broth, salt, and pepper. Get it boiling, then lower the heat to medium. Cook potatoes until fork-tender in soup.

Around 10-12 minutes. Put sausage and kale back. Simmer for 2 minutes after a gentle boil. Turn down the heat.

To taste, add seasoning. Return to a gentle boil after adding the cream. Simmer for a minute or two. Take off the heat source.

Serve this creamy, delicious soup with bacon crumbles and freshly grated Parmesan cheese.
