Chocolate Covered Almond Butter Stuffed Dates Recipe

These stuffed dates are a dream for nut butter and chocolate lovers! Use almond, peanut, cashew, Nuttzo, and other nut butters!

INGREDIENT

– 16 medjool dates pitted* – ⅓ to ½ cup unsweetened creamy almond butter ** – ½ cup raw pecans chopped** – 1/2 cup chocolate chip – 1 tsp coconut oil – Flaky sea salt for garnish

INSTRUCTIONS

Cut the dates lengthwise and remove the pits with a paring knife. Although pitted dates don't need to be pitted, they must be sliced open for almond butter. 

Step 1

Set pitted sliced dates on a small baking sheet, plate, or platter. Fill dates with 1–2 teaspoons almond butter using a butter knife or small spoon. 

Step 2

How much almond butter you stuff into a date depends on its size. Instead of precision, follow your heart.

Step 3

Top almond butter with chopped pecans. Before adding almond butter, chop nuts can be placed in the date cavity.

Step 4

Stir the chocolate chips and coconut oil in a microwave-safe bowl for 20 seconds at a time until melted, about 60 seconds.

Step 5

Glaze stuffed dates with melted chocolate. Cover or lightly drizzle date in chocolate. I like both ways.

Step 6

Add flaky sea salt to dates while chocolate melts. Refrigerate the sheet pan or plate for 30–60 minutes to harden the chocolate.
