Cheesy Chicken and Rice Bake With Broccoli Recipe 

This Cheesy Chicken and Rice Bake has tender chicken chunks, perfectly cooked rice, vibrant green broccoli, and melty cheese. This dish is creamy and hearty like Chicken Divan but without cream of soup. 

– 1 pound chicken breasts cut into bite-sized smaller piece – 2 cups brown rice cooked or white rice – 4 ½ cups fresh broccoli cut into small floret – 2 tablespoons olive oil divided – 1 small yellow onion diced – 2 tablespoons all purpose flour – 2 cups milk – ¼ teaspoon garlic powder – ¼ teaspoon onion powder – 1 teaspoon smoked paprika – ½ teaspoon kosher salt or to taste – ¼ teaspoon ground pepper



Use olive oil or butter to lightly grease an 8x11 casserole dish. Sear chicken for 5-6 minutes in a large skillet over medium-high heat with 1 tablespoon of cooking oil.

Add the remaining oil to the skillet. Sauté the onion until brownish once hot. Quickly whisk in the flour for a minute.

In batches, whisk milk continuously. Stir in the spices and salt and black pepper after adding all the milk.

Lower the heat to thicken the mixture. Stir periodically. Add 1 ½ cups of cheddar cheese after removing from heat.

Stir to melt and mix cheese. Blend rice, broccoli, chicken, and sauce in a large bowl or casserole dish.

Top with the remaining ½ cups cheese. Bake 20-25 minutes. Serve the casserole warm and cheese-melted.
