Cassava Flour Banana Bread (Grain-Free) Recipe

A fluffy grain-free, dairy-free, refined sugar-free banana bread! Cassava Flour Banana Bread provides a healthy snack with banana flavour and is easy to make! 

– 3 large ripe bananas mashed (1.25 cups) – ¼ cup pure maple syrup – 2 large egg – 1/3 cup avocado oil or olive oil – 2 tsp pure vanilla extract – 2 tsp apple cider vinegar or lemon juice – 2 cups cassava flour – 2 tsp baking powder – 1/2 tsp baking soda – 1/2 tsp sea salt – 1 Tbsp ground cinnamon – ⅔ cup chocolate chips optional

Pre-heat the oven to 350°F and line an 8" x 5" loaf pan with parchment.

Cream bananas in big dish. Whisk eggs, pure maple syrup, avocado oil, and vanilla.Mix cassava flour, baking powder, soda, cinnamon, and sea salt separately.Mix dry and wet components.

Make sure the chocolate chips are evenly distributed in the batter.Spread banana bread batter evenly in the loaf pan.

Sprinkle more chocolate chips on the dough if desired.Cover the bread pan with foil and bake for 40 minutes on the centre rack of the preheated oven to avoid a brown top.

Remove foil and bake banana bread for 10–25 more minutes until cooked through and golden brown.

Let the bread cool for 30 minutes before slicing and serving.

Serve banana bread with lots of butter and honey or maple syrup. Almond or peanut butter on banana bread is also delicious!
