Caesar Salad Recipe

Our take on the traditional Caesar salad has a rich, creamy dressing that is simple to make and will enhance the flavour of many of your favourite salads. 

– 4 egg – 10 Cherry tomatoes  – Lemon wedges or slices for serving – 5 cups Lettuce of choice – Salt and pepper – Parmesan shavings for serving – Herb Croutons for serving – ¾ cup mayonnaise – 1 smoked sardine/anchovies  – 3-5 tablespoons of good quality olive oil – 1 large garlic clove  – ¾ cup parmesan  – 2 tablespoons of fresh lemon juice – 3 tablespoons of sour cream – ½ teaspoon dijon – 1 dash Worcestershire sauce

The sardine should be mashed in a large bowl. Blend in all of the remaining ingredients for the dressing.

In order to allow the flavours to meld, stir everything together and refrigerate for at least 30 to 60 minutes.

Choose sardines or anchovies dipped in oil. Take one paper towel, drain any excess oil, and mash it into a paste.

If the odour bothers you, replace the anchovies with a sprinkling of Worcestershire sauce.

Mix the salad ingredients in a bowl. Stir the dressing and pour it over the salad after refrigerating.

Reduce the amount of parmesan in the sauce to ½ cup or less if you want a smoother texture.

Add some lemon slices, croutons, black cracked pepper, and more parmesan shavings as garnish, then enjoy!
