Cacio e Pepe Mashed Potatoes Recipe

The Cacio e Pepe Mashed Potatoes are a tasty mix of two comfort foods. For the best results, use freshly ground pepper.

– 2 ½ pounds russet potatoes (peeled and diced) – ½ cup half and half – ½ cup grated parmesan cheese (plus more for topping) – ¼ cup butter, melted – ¾ teaspoon kosher salt – ½ teaspoon fresh ground black pepper

Put the chopped and peeled potatoes in a big pot of cold water. Bring it to a low boil, then turn it down to a simmer.
