That epic side salad recipe you always wanted! The fresh, delicious ingredients in this Blueberry Avocado Chopped Salad make it amazing. Use it as a side or light meal.
INGREDIENT
– 5 ounces baby spinach thinly chopped– 5 ounces hearts of romain thinly chopped– 1 large ripe avocado diced– 6 ounces feta cheese*– 1 ½ cups fresh blueberrie– ½ cup roasted salted sunflower seed– ¼ cup raw pumpkin seed– Balsamic Vinaigrette
Cut the baby spinach into small pieces on a large cutting board with a sharp knife. I want thin ribbons. Serve chopped spinach in a large bowl.

A large bowl is needed because this makes a lot of salad. Chop and add romaine hearts to the serving bowl.
Step 2
Add avocado and feta (if using block feta) to the bowl. Mix in blueberries, sunflower seeds, and pumpkin seeds.
Step 3
Pour your desired amount of dressing over the salad and toss with salad tongs until coated. Taste the salad and add dressing, avocado, or cheese if desired.
