Almond Butter Oatmeal Cookies Recipe

When you want everything, try these rich, chewy almond butter chocolate chip oatmeal cookies! This treat is delicious for everyone and easy to make with nut butter or dried fruit instead of chocolate chips! 

INGREDIENT

– 1 cup unsweetened almond butter – 2 large eggs* – ⅓ cup pure maple syrup – 1 ½ cups rolled oats – 1/2 tsp ground cinnamon optional – 1/2 tsp sea salt – 2/3 cup chocolate chips optional

Preheat the oven to 350°F and line a large baking sheet with parchment.

Note: Microwave one cup of almond butter for 10–20 seconds until softened and easy to stir if it's hard from the fridge or cool. 

Step 2

Combine almond butter, eggs, and pure maple syrup in a large bowl. Make everything creamy and sticky. A fork or hand mixer works for me.  

Step 3

Mix rolled oats, cinnamon, sea salt, and chocolate chips well. This oatmeal mixture is sticky, unlike cookie dough. This is normal. 

Step 4

Put mounds of cookie dough on the pan. If the dough lumps are the right shape, the cookies won't spread or change shape during baking. You can bake any size cookie.  

Step 5

Add chocolate chips to cookie dough. Preheat the oven and bake on the centre rack for 9–12 minutes. Bake large cookies for 12 minutes and small cookies for 8–9 minutes until set and golden brown. 

Step 6

Remove cookies from cookie sheet after they've cooled completely. Moving warm cookies breaks them, so this keeps them together. 

Step 7

Serve and enjoy! Warm cookies with vanilla ice cream are decadent.
